COMPARATIVE TABLE OF PRODUCTION. The following census of butter and cheese factories shows that of the sixty-one counties in the State, in the following ten, viz.: Hamilton, Kings, Nassau, New York, Niagara, Queens, Richmond, Rockland, Warren and Yates, no butter or cheese was made in factories during the season of 1904. In the remaining fifty-one counties of the State the whole quantity of butter and cheese made in factories, condenseries and milk stations is given and compared with the production of 1902. Casein.
