Measuring flour by cups is so inaccurate when making bread. With the cost of digital scales measuring in grams available at low cost and the absence of baker's percentages, this book needs to be updated. Not recommended.

I raised my five children with fresh breads daily. Originally, I used Tassarra Bread Book, but I needed something more in which to understand flour and water mixed with yeast. Enter Bernard Clayton. My original print of Complete Breads is so old and used now, complete with stains received from hours in the kitchen hovering over its pages - all of my babies grown and baking their own bread. Several of my children have requested that original book for posterity. Thank you, Bernard, for all the wonderful stories that accompany each and every recipe, and for a revised copy replete with new recipes. The Complete Book of Soups and Stews is also wonderful.
